Arabic Chicken Maklouba – a fitness meal in one pot

Arabic Chicken Maklouba is another favorite from the Arabic cuisine. Remember our Healthy Siniya recipe? This one has also a great mixture of spices that gives the food great flavor. Moreover, we know we all get tired of eating the same food. So here is some variation for the familiar chicken. To make Maklouba healthy, we have had a bit of tweaking and testing. Here is a great recipe that will refresh your diet and add beauty to it!

Arabic Chicken Maklouba

Chicken Maklouba is a meal in a pot. It has all the nutrients you need plus fabulous taste. chicken, mangold, rice, tomatoes and white wine.

Ingredients

  • 1 kg cubed chicken breast
  • 2 tbsp olive oil
  • 4 diced white onions
  • 8 strips diced celery
  • 1 kg chard (mangold)
  • 1 cup white wine
  • 1 tsp lemon peel
  • 1 lemon, juiced
  • ½ tsp turmeric
  • 10 springs chopped coriander
  • 3 tomatoes, sliced
  • 4 cloves chopped garlic
  • 1.5 cups brown rice, cooked
  • cups water
  • salt, to taste to taste
  • ground black pepper to taste

Instructions

  • Cut the chard leaves into strips.
  • Cut tomatoes into slices.
  • Heat 1 tbsp olive oil and cook the chicken for 4 minutes until brown on both sides, move to a medium sized pot as first layer (eventually will be top after turned over).
  • In the same pan you cooked the chicken, heat the remaining olive oil with the onions and cook for 3 minutes until gold, add the celery and cook for 3 more minutes.
  • Add mangold and cook for 2 more minutes, add the wine and simmer for 7 minutes.
  • Add lemon peel and lemon juice, spices, mix for a minute and remove from flame.
  • Add coriander and mix.
  • Add the mixture onto the chicken.
  • Place above the tomatoes, garlic and rice.
  • Add the water, cover and cook for 20 minutes.
  • Place pot aside for 10 additional minutes and then turn over the pot on a clean plate.
