Garlic Mushroom Quinoa
Ingredients
- 1 cup cooked quinoa
- 1 tsp olive oil
- ½ kg thinly sliced champignon mushrooms
- 5 cloves minced garlic
- ½ tsp dried thyme
- ground black pepper to taste
- salt to taste
- ½ tbsp grated parmesan reduced fat
Instructions
- In a large saucepan put 2 cups water, cook quinoa according to package instructions.
- Heat olive oil in a large skillet over medium-high heat.
- Add mushrooms, garlic and thyme, cook, stirring occasionally, until tender, about 3-4 minutes.
- Season with salt and pepper, to taste.
- Stir in quinoa.
- Garnish with parmesan.
