Healthy Mexican Food – Chicken Breast Recipe
Ingredients
- 6 halved Chicken breasts 3.3 pounds
For Marinade:
- 4 garlic cloves
- 1/4 cup lime juice
- 9 springs of coriander
- 2 tbsp ground coriander seeds
- 1/4 cup Chipotle
- 1/4 tbsp cinnamon
- 1 tbsp salt
Instructions
- Blend all marinade contents together until achieving homogeneous texture
- Place chicken breasts in bowl or ziplock bag with marinade for at least an hour in the fridge. If possible let it marinade over night.
- Take out chicken breasts and fry in a pan until golden (little to no oil required due to marinad).
- Serve with brown rice and some vegetables.
