Oriental Fish and Noodles – Vietnamese cuisine for fitness freaks

Oriental Fish and Noodles
Ingredients
- 4 fillet tilapia
- 1 tsp olive oil
- 6 cloves minced garlic
- 1 chopped spicy green pepper
- 4 grated tomatoes
- 1 tbsp no sugar tomato paste
- 300 gr whole weat cooked noodles
- 1 tsp sweet paprika
- 1 tsp spicy paprika
- 2 tbsp lime juice
- ½ tsp cumin
- ½ tsp salt
- 1 cup water
- 1 spring parsley
- 1 spring coriander
Instructions
- Prepare noodles according to manufacturer's instructions
- Heat olive oil, add the garlic, pepper, tomatoes and tomato paste and cook for a minute
- Add the paprikas, lime juice, cumin and salt
- Add water, parsley and coriander, cook for 5 minutes
- Add the fish to the sauce and cook on low heat for 2.5 minutes each side. Remove the fish and place aside
- Add the noodles to the sauces and cook for 3 minutes
- to serve: garnish with few coriander leaves
