Overnight Slow Cook – Shredded Beef and Penne
Shredded beef and penne is a recipe for those times you want to have a super tasty meal with minimum effort. Try this overnight slow cook shredded beef and penne and you won’t regret it! You simply put all the ingredients in a slow cooker overnight. In the morning, you wake up to this amazing smell that fill your home. Beef, penne, red wine and dried fruit. You can’t go wrong with this recipe, trust me!
Don’t have a slow cooker? No problem. Place all the ingredients in a pot instead, bring to a boil and cover on low flame overnight or early in the morning until evening.

Overnight Slow Cook Beef and Penne
Ingredients
- 1 kg cubed or whole lean beef
- 3 tsp olive oil
- salt to taste
- ground black pepper to taste
- 2 sliced and peeled carrots
- 3 strip chopped celery
- 2 chopped white onions
- 2 chopped leeks
- 500 mil red wine
- 1 tbsp honey
- 4 pitted dates
- 4 pitted prunes
- 1 tsp thyme
- 60 g raisin
- 992.2 gr cooked, whole wheat penne (225g~ dried pasta)
- 2 dried bay leaves
Instructions
- Massage the beef with the olive oil.
- season with salt and pepper
- Place the beef in a slow cooker or a cooking pot and add the remaining ingredients except for the pasta. (if the beef is not covered with liquids add water)
- Cover cooker / pot well and activate cooker (or place cooking pot in preheat oven set to 200 Fahrenheit/ 100 celsius degrees) for 10 hours (overnight)
- Remove the beef and break into stripes by hand or using a fork.
- Cook pasta according to manufacturer instructions. (about 225g dried pasta)
- Mix sauce, beef and pasta together.
