Pad Ka Pow
Equipment
- a food processor
- a Wok
Ingredients
- 1 kg ground chicken breast
- 2 tsp olive oil
- 1 red onion
- 6 cloves garlic
- 2 spicy red peppers
- 2 spicy green peppers
- 1 cup roughly chopped basil
- 1 cup roughly chopped cilantro
- 1 cup roughly chopped mint
- 3 tbsp low sodium soy sauce
- 1 tbsp red curry paste
- 1 tbsp green curry
- 7 eggs
Instructions
- Crush the onion, garlic and peppers in a food processor.
- Heat the oil in a wok, add the onion, garlic and peppers, blend and fry for about a minute.
- Add the ground chicken and cook for additional 3 minutes until nearly ready.
- Add the soy sauce, the curries and the chopped leaves and mix.
- Remove from the stove.
- Fry the eggs, sunny side up.
- To serve: set the ground chicken mixture on fried whole weat rice and place the egg on top.
