Sweet Potato Shepherd’s Pie
Ingredients
- 1 kg ground lean beef
- 2 potatoes
- 4 sweet potatoes
- 2 tsp olive oil
- 4 diced white onions
- 4 diced carrots
- 4 cloves minced garlic
- 2 tbsp sweet paprika
- 1 tbsp turmeric
- 1 tbsp cumin
- 10 springs chopped parsley
- ground black pepper to taste
- salt to taste
Instructions
- Preheat oven to 380 degrees Fahrenheit (190 celsius).
- Cook potatoes and sweet potatoes until soft (about 20 minutes).
- Simmer in 1 tsp of olive oil, the onions and the carrots until soft.
- Add another 1 tsp of olive oil, then add the ground beef, minced garlic, paprika, turmeric, cumin, salt and pepper.
- Mix ingredients and break up the ground beef into small pieces until color start to turn grey.
- Add parsley and cook for an additional minute, set aside.
- Crush the potatoes and sweet potatoes into a puree, add salt and pepper to taste.
- Flatten the beef mixture on a baking dish and flat the puree mixture on top.
- Bake for 35 minutes until puree becomes lightly golden in color.
