Preheat oven to 400°F (200°C).
Prepare 3 eggs to hard boil, peel and cut into quarters.
Cook, peel and mash sweet potato.
Cook onions in the olive oil until transparent.
Combine in a bowl sweet potato and onion, season with salt and pepper.
Take one piece of chicken breast, season both sides with a bit of pepper.
Lay about a tbsp of the potato and onion mixture onto a single chicken breast.
Lay half a slice of pastrami on top.
Place the egg quarter on one end and start rolling from that end.
Repeat for all breasts.
Prepare 3 bowls, 1 with the flour, 1 with the breadcrumbs and the last break open the remaining eggs.
Cover each chicken roll with flour, repeat for all rolls.
Dip each roll (covered with flour) into the egg and finally into the breadcrumbs.
Put the rolls on to a baking pan and place in the oven for 20 minutes.
Tip! slice pieces to look like sushi and dip in a small bowl of soy sauce.
