Coq au Vin

This classic French chicken dish has been given a healthy makeover but still has a rich, deep flavour. Made by Fitness Meal Planner, coq au vin is a classic French stew in which chicken is braised slowly in red wine and a little brandy to yield a supremely rich sauce filled with tender meat, mushrooms and burnished pearl onions.

Ingredients

  • 1 kg chicken breast
  • 96 gr champignon mushrooms, cut to quarters
  • 1 sliced carrot
  • 1 strip sliced celery
  • 1 sliced leek
  • 4 cups red wine
  • ½ tsp allspice
  • 3 dried bay leaves
  • ½ tbsp thyme
  • 10 spring chopped parsley
  • black pepper to taste
  • salt to taste
  • 1 tbsp olive oil
  • 100 gr shallot
  • ½ cup whole grain wheat flour
  • ½ cup brandy

Instructions

  • Boil shallot in water for 15 minutes till soft and set aside.
  • Place the chicken, vegetables except for the shallot, spices and wine into a canister, cover and place in fridge for 8 hours.
  • Remove the chicken and dry with paper towel.
  • Coat chicken in flour.
  • Filter out the vegetables, keep wine and vegetables in separate containers.
  • Add olive oil to cooking pot and cook the chicken until golden.
  • Add brandy to the pot and inflame chicken up to a minute.
  • Remove chicken.
  • Add vegetables and cook for 3-5 minutes.
  • Add wine and the chicken and bring to a boil, lower heat and cover pot for 45 minutes.
  • To reduce fluids, remove cover and put on high heat for 5 minutes
  • Remove from stove and add parsley and shallot.
