Ingredients

  • 1 cup cooked quinoa
  • 1 tsp olive oil
  • ½ kg thinly sliced champignon mushrooms
  • 5 cloves minced garlic
  • ½ tsp dried thyme
  • ground black pepper to taste
  • salt to taste
  • ½ tbsp grated parmesan reduced fat

Instructions

  • In a large saucepan put 2 cups water, cook quinoa according to package instructions.
  • Heat olive oil in a large skillet over medium-high heat.
  • Add mushrooms, garlic and thyme, cook, stirring occasionally, until tender, about 3-4 minutes.
  • Season with salt and pepper, to taste.
  • Stir in quinoa.
  • Garnish with parmesan.
