- 1 kg chicken breast
- 1 tsp olive oil
- 2 red onions
- 1 tbsp sweet paprika
- 2 tomatoes
- 1 green bell pepper
- 1 cup water
- ⅓ cup coconut milk
- 2 tsp whole grain weat flour
- ⅓ cup chopped parsley
- ground black pepper to taste
- salt to taste
Chop the tomatoes, pepper, parsley and onions.
Generously salt and pepper the chicken breasts.
Heat a large cooking pot on high temperature, add the olive oil and cook the chicken for 5 minutes each side until becomes golden and remove from pot.
Add the onions to the pot and cook for 5 minutes.
Add the paprika and cook for half a minute and put back the chicken.
Add the tomatoes, pepper and water. stir to a boil.
Lower flame, cover and cook for an hour until chicken is tender. Flip chicken from time to time while cooking.
Mix in a bowl the coconut milk and flour and add to pot. Continue to mix until the mixture is smooth.
Set high temperature and boil for another 5 minutes without cover.
Add parsley and remove from stove.
