Hungarian Chicken Paprikash

Ingredients

  • 1 kg chicken breast
  • 1 tsp olive oil
  • 2 red onions
  • 1 tbsp sweet paprika
  • 2 tomatoes
  • 1 green bell pepper
  • 1 cup water
  • cup coconut milk
  • 2 tsp whole grain weat flour
  • cup chopped parsley
  • ground black pepper to taste
  • salt to taste

Instructions

  • Chop the tomatoes, pepper, parsley and onions.
  • Generously salt and pepper the chicken breasts.
  • Heat a large cooking pot on high temperature, add the olive oil and cook the chicken for 5 minutes each side until becomes golden and remove from pot.
  • Add the onions to the pot and cook for 5 minutes.
  • Add the paprika and cook for half a minute and put back the chicken.
  • Add the tomatoes, pepper and water. stir to a boil.
  • Lower flame, cover and cook for an hour until chicken is tender. Flip chicken from time to time while cooking.
  • Mix in a bowl the coconut milk and flour and add to pot. Continue to mix until the mixture is smooth.
  • Set high temperature and boil for another 5 minutes without cover.
  • Add parsley and remove from stove.
