Equipment

Ingredients

  • 1 kg ground chicken breast
  • 2 tsp olive oil
  • 1 red onion
  • 6 cloves garlic
  • 2 spicy red peppers
  • 2 spicy green peppers
  • 1 cup roughly chopped basil
  • 1 cup roughly chopped cilantro
  • 1 cup roughly chopped mint
  • 3 tbsp low sodium soy sauce
  • 1 tbsp red curry paste
  • 1 tbsp green curry
  • 7 eggs

Instructions

  • Crush the onion, garlic and peppers in a food processor.
  • Heat the oil in a wok, add the onion, garlic and peppers, blend and fry for about a minute.
  • Add the ground chicken and cook for additional 3 minutes until nearly ready.
  • Add the soy sauce, the curries and the chopped leaves and mix.
  • Remove from the stove.
  • Fry the eggs, sunny side up.
  • To serve: set the ground chicken mixture on fried whole weat rice and place the egg on top.
