1kgground chicken breast
2tspolive oil
1red onion
6clovesgarlic
2spicy red peppers
2spicy green peppers
1cuproughly chopped basil
1cuproughly chopped cilantro
1cuproughly chopped mint
3tbsplow sodium soy sauce
1tbspred curry paste
1tbspgreen curry

Instructions
Crush the onion, garlic and peppers in a food processor.
Heat the oil in a wok, add the onion, garlic and peppers, blend and fry for about a minute.
Add the ground chicken and cook for additional 3 minutes until nearly ready.
Add the soy sauce, the curries and the chopped leaves and mix.
Remove from the stove.
Fry the eggs, sunny side up.
To serve: set the ground chicken mixture on fried whole weat rice and place the egg on top.
