Spaghetti Bolognese

Meal prepping for the week? This Spaghetti Bolognese is another chef's recipe that will compensate for all the hard work you put in the gym. Although it is not the authentic Italian Ragu, it is a close enough version of that. A thick, rich and soft meat sauce together with spaghetti makes it a super tasty meal.

Ingredients

  • 600 gr cooked Whole Wheat Pasta (~250g dry pasta)
  • 1 kg ground lean beef
  • 1 tbsp olive oil
  • 1 tbsp oregano
  • 1 red onion
  • 4 cloves garlic
  • 1 spicy red pepper
  • 1 carrot
  • 4 strips celery
  • 1 tbsp sweet paprika
  • 1 tsp spicy paprika
  • salt to taste
  • ground black pepper to taste
  • cup crushed tomatoes
  • 100 gr no sugar tomato paste
  • 0.5 cup dry red wine
  • 1 cup water

Instructions

  • Put a large pan on medium heat and add 1 tbsp olive oil.
  • When the oil is hot, add oregano, red onion, garlic, spicy red pepper, carrot, celery, the paprikas salt and pepper.
  • Fry for 5-6 minutes, stir often until softens.
  • Add the ground beef and cook stirring until the meat is brown all over.
  • Add the crushed tomatoes, tomato paste and mix for couple of minutes. Add the red wine, bring to a boil, let it boil for two minutes.
  • Add the water, again bring to a boil and then reduce to a gentle simmer and cover with a lid and cook for 1.5 hours stirring occasionally, until you have a rich, thick sauce.
  • When the bolognese is nearly finished, cook the spaghetti or any other pasta you like following the pack instructions.
  • Drain the water of the spaghetti and stir into the bolognese sauce and serve.
