Put a large pan on medium heat and add 1 tbsp olive oil.
When the oil is hot, add oregano, red onion, garlic, spicy red pepper, carrot, celery, the paprikas salt and pepper.
Fry for 5-6 minutes, stir often until softens.
Add the ground beef and cook stirring until the meat is brown all over.
Add the crushed tomatoes, tomato paste and mix for couple of minutes. Add the red wine, bring to a boil, let it boil for two minutes.
Add the water, again bring to a boil and then reduce to a gentle simmer and cover with a lid and cook for 1.5 hours stirring occasionally, until you have a rich, thick sauce.
When the bolognese is nearly finished, cook the spaghetti or any other pasta you like following the pack instructions.
Drain the water of the spaghetti and stir into the bolognese sauce and serve.
