Sweet Potato Shepherd's Pie

- 1 kg ground lean beef
- 2 potatoes
- 4 sweet potatoes
- 2 tsp olive oil
- 4 diced white onions
- 4 diced carrots
- 4 cloves minced garlic
- 2 tbsp sweet paprika
- 1 tbsp turmeric
- 1 tbsp cumin
- 10 springs chopped parsley
- ground black pepper to taste
- salt to taste
Preheat oven to 380 degrees Fahrenheit (190 celsius).
Cook potatoes and sweet potatoes until soft (about 20 minutes).
Simmer in 1 tsp of olive oil, the onions and the carrots until soft.
Add another 1 tsp of olive oil, then add the ground beef, minced garlic, paprika, turmeric, cumin, salt and pepper.
Mix ingredients and break up the ground beef into small pieces until color start to turn grey.
Add parsley and cook for an additional minute, set aside.
Crush the potatoes and sweet potatoes into a puree, add salt and pepper to taste.
Flatten the beef mixture on a baking dish and flat the puree mixture on top.
Bake for 35 minutes until puree becomes lightly golden in color.
